Busy day…but it’s my anniversary…

Today I have been married for 14 years to the best husband in the world. He is my best friend and lover. I love him deeply and dearly. We spent the day together yesterday because today was busy. We went to lunch, and gave each other our gifts. He bought us tickets to go to a local dinner theater in March! We have never done anything like that. And I gave him the enlarged pictures of our 2 favorite wedding poses. Never had those made all those year ago. All we need is the right frames and to hang them. So they wait…

I took Lauren to see the maternity home today. She liked it and is seriously considering going there, if they will have her. There are some details to be worked out but I feel this would be a good place for her for the next 7 months or so. After that she will still need a place to live. She hasn’t decided to parent or adopt so we wait…

Speaking of waiting, Asher was going to make his entrance today but decided not to at the last minute! I know Brit is getting frustrated. She had labor most of the night then mid-morning it just died down to nothing. So we wait…

Menu Plan Monday

Time for the plan. Last week the beef was bad so I bought new and will keep the stroganoff on for this week. Enjoy.

Monday: Inside out cheeseburgers and chips-  Note: we modified the cheeseburger recipe a bit. We put mushrooms, fresh minced garlic and fresh mozzerella cheese some, mexican blend cheese in one and mushrooms, garlic and mexican blend cheese in the last. Yummy! Try your own combos and be sure to use beef. We used ground turkey and they were missing some flavor.

Tuesday: Turkey tacos

Wednesday: One pot beef stroganoff, peas

Thursday: Leftovers

Friday: Chicken(need a new recipe), twice baked cauliflower

Saturday: Sub sandwiches

Sunday: Super bowl food!

My new recipe

Tonight I needed something new to do with the chicken I set out for dinner. I had to use up a few things that were in the refridgerator. The beef I bought for the stroganoff the other night was bad. I still haven’t returned it to Aldi but at this point, I won’t. I will just toss it. I will be sure to buy foods with “sell by” dates that are further out than 2 days! So I had mushrooms and onions all chopped up. I developed my own new recipe.

If you do make this, please feel free to ask questions and/or to come back and post your results. We enjoyed it. Oh yeah, my son Caleb calls this “When Lemon Attacks Chicken”.

Zinger Chicken

1 lb chicken breast, trimmed of fat and cut into 1″ x 2 ” strips

1/2 lb. sliced mushrooms

1 small onion, diced

2 carrots, scrubbed(not peeled), sliced 1/4″ on an angle.Don’t use baby carrots, you just don’t get the same flavor.

1 whole lemon, juiced

1 can of black olives

1 teaspoon, give or take, of kosher salt

1 teaspoon or more of rosemary.

Fresh ground white pepper

3 cloved of garlic, minced

olive oil

3 TBSP. butter

 Cooked fettucine.

Add 3 TBSP olive oil to pan, heating on med. high heat. When hot add carrots, onion and garlic. Stir and cook for about 5-6 min to bring out flavors. Add chicken, salt, rosemary, pepper, lemon juice and continue to cook and stir for about 5 more minutes. Add a few more TBSP of olive oil. Cover and cook for about 5 minutes. Add mushrooms and olives. Add butter.Cover and lower heat and cook till heated through, just a few minutes. Don’t over cook or the carrots will be mushy. Serve with fettucine and some grated parmesan if you like.

I usually don’t measure so these are approximates. You could add zucchini or broccoli or just about any veggie to this dish. You could even remove the ones I used and come up with your own combo. I just like to have fun and experiment. Enjoy!

Sing with me….It’s my blog and I’ll blog if I want to…

Blog if I want to, you would blog too if it happened to you!!….

 So my sister and I got into an argument today by way of email, great thing technology! She told me in her final email to not go blogging about our conversations! lol…ya right. It’s my blog, my life and if I want to tell people about it, I can!

Actually we settled things enough to stay friendly. She called me on her way home from work to make sure I guess. Funny thing is my mom called later on and I thought oh no, now what? It was nothing, she had no idea about the argument. Just as well, she would not have understood it anyway.

The one thing that bothers me most is why do I feel the need to defend myself against her? She is not my parent just my sister. She is my equal, even if she is older. I chose a different path in life than her. So what? I am happy with my life and what I am doing with it. I guess she is happy with her life as well. Good for her. I don’t come down on her for her choices, so why get on me for mine. I know she might read this but she won’t comment so I am not worried. I love her but she gets to me sometimes.

I hate divorce because if my parents hadn’t divorced then our family would not have divorced. My sister and brother lived with my dad after they divorced.  That not only changed my relationship with my dad but with the both of them. They are closer to each other as a result. And me living 2 hours away for the last 13 years has also contributed to the issue. I guess one day we might get along better and not argue about  the same stupid stuff. Until then, I guess I will have to learn some strategies.

Thursday Thirteen #11

Time for my weekly Thursday Thirteen

Thirteen reasons I moved my blog:

1. WordPress is simple to use.

2. MJ twisted my arm, not really.

3. I like the dashboard on WP rather than Blogger.

4. I like to change things up a bit now and then.

5. Even though my good friend updated the graphics at my other blog, and I appreciate her hard work, I think I will stay here.

6. I think change is good, did I say that already.

7. The widgets here are super cool.

8. I like the clean lines and clear directions.

9. WP has lots of cool templates. I will be changing mine from time to time just to find a favorite.

10. I can finally have a links bar on the side! I lost the code at blogger and lost my links while trying to change them.

11. Losing my links was rough so I like being able to start again here.

12. I hope my friends and readers don’t mind the change.

13. Change is good, even when painful, but this was the most painfree change I have had in a long time.

Menu Plan Monday

It’s Monday, so we all know what that means, right? Time for me to rack my brain out trying to plan a few meals. This does help me feel better through busy weeks, but I hate trying to think up new meal ideas. I guess repeats are ok too.

Monday: Spaghetti and salad

Tuesday: Chicken casserole of some sort

Wednesday: Egg salad sandwiches and chicken noodle soup

Thursday: One pot beef stroganoff

Friday: Breakfast for dinner

Saturday:Pinewood derby day so hotdogs and chips at the derby

Sunday: Leftovers or something I whip up quick!

Friday’s Feast

It’s feasting time once again!!!

Appetizer: What is your favorite beverage? Hmm, I guess coffee and water.

Soup: Name 3 things that are on your computer desk at home or work.My coffee cup, my phone and a can of pencils/pens/scissors. Boring, huh?

Salad: On a scale of 1-10 (with 10 being highest), how honest do you think you are? Somewhere in the range of 8-10, I don’t lie much.

Main Course: If you could change the name of one city in the world, what would you rename it and why? Oh goodness, do we need a city named Intercourse? It’s in PA, maybe it should just be Amish Junction or something like that!

Dessert:What stresses you out? What calms you down? People who can’t or won’t help themselves. Calming things are music and time alone with my husband.
