Menu Plan Monday

Ok, so I am a little late but better late than never! Here we go.

Monday: Stuffed chicken breasts with tarragon sauce, brown rice, corn

Tuesday: Cube steaks and potato ragout, peas

Wednesday:Dinner out-Applebee’s maybe

Thursday: White chicken chili, tortilla strips and fruit

Friday: leftovers or sandwiches or the Fish Fry

Saturday: Burgers and fries, maybe homemade sweetpotato fries. (I need a recipe!)

Sunday: Italian food of some kind

Monday: Phil’s birthday, his choice-grilled chicken ceasar pita sandwiches, chocolate something for dessert!

Tuesday: Breakfast for dinner

Wednesday: Same as today but with egg noodles

Menu Plan Monday

We have a busy week so the menu is simple and light.

Monday: Burgers and munchies

Tuesday: Breakfast for dinner-play that night

Wednesday: Chili (recipe below) and cornbread

Thursday: Michelle’s Italian chicken, pasta and green beans

Friday: Subs and salads

Saturday: Cub Scout Blue and Gold banquet

Sunday: Clean out the refridgerator.

 My Award Winning Chili

2 lbs ground turkey
1/2 sweet onion chopped
4-5 cloves of garlic, crushed
Brown those 3 together. Drain off fat. Add two 28 ounce cans of tomato sauce, 1 large can of kidney beans, rinsed, and 1 small can of green chilies.
Add
3-4 tablespoons chili powder
1-2 teaspoons cumin
1-2 teaspoons cinnamon
salt and pepper

Cook on low in crock pot or on stove top.

I actually didn’t measure this time around so those are approximates. There was probably more garlic cause I let my ds do that part. It’s very spicy though. yummy.

White chicken chili

I was asked for this recipe and thought I better come up with one. I am a “throw a little of this and that in the pot” kind of chili chick so bear with me here.

5 chicken breasts (halves really)
water
2 packages Chi-Chi’s taco seasoning, not the red kind
garlic powder
cumin
2 cans of cannelini beans or white beans of choice
sour cream
cheese

Cook the chicken in enough water to cover the chicken until falling apart, about 45 minutes. Season water with garlic and cumin, generous sprinkles. Take out chicken and dice it up, return to pot. Take out a cup or two of the stock. (Can save stock for another use if you like.) Add in the seasoning packets and some more garlic powder and cumin. Run the beans through a food processor, I do this cause I have a son who won’t eat the beans, little does he know they are in there! Add them to the pot. Stir and cook for about 15 minutes.
Serve with sour cream and shredded cheese. A few dashes of hot sauce add extra oomph!

Homemade crunchy tortilla strips:

4 soft tortillas
non-stick spray
kosher salt

Cut stack of tortillas in half. Begin with half of the tortillas and slice 1/4″ strips. Coat a pan or stoneware pan with spray. Add strips. Coat strips with spray and sprinkle kosher salt on the strips. Bake at 400 for about 10-15 minutes. Sprinkle on or serve with chili

Yep, another Sunday

Today was good. Oh yeah, I tied for first place in yesterday’s chili cook-off! Woot woot!!! Phil and I taught Caleb’s Sunday school class at church. It was good. The kids were well behaved. I think it was a little boring but not knowing the kids, I didn’t know how to make it more exciting. So next week could be better, we’ll see.

I think I had a banner week. Winning the chili thing, and then on Thursday we went to the Love and Respect video conference at church. During small group time, I made a personal observation that I learned during the video and shared it with the group. The one leader was wowed by the depth of what I learned. I got embarrassed a bit. But it was like being the smart one in class or something. Not bad I guess. I hope to really put these principals into practice. One of this week’s Generous Wife tips was about baking homemade bread. Tomorrow I plan on buying some frozen bread dough and baking a few loaves. I think it will be a nice welcome home for Phil. The boys are off and have to get their teeth cleaned. They are not happy about it. Funny, cause it’s not painful at all. Jake will most likely get his loose tooth pulled since the new one is growing in crooked behind it! Hopefully that won’t be bad.

I keep trying to find a job. No luck yet. I need to get a job as an aide at school that way I will only work when school is in session. That would be the perfect job. So I pray. Hopefully Phil will finally get that interview this week for the one job that is interested in him. The other interviews he has had have not produced high enough paying jobs. Keep praying.

Ok, off to plan my menu to post in the morning and to watch some tv with my honey.
