This is a variation of two different recipes and I put them together to work for our family’s likes and tastes.
Garlic-lime Chicken with Jasmine Rice
1/3 cup lime juice
1/2 cup or so of olive oil
3 cloves garlic, minced or pressed
1 teaspoon crushed red pepper
1 teaspoon salt
pepper to taste
1 pound of boneless, skinless chicken breasts (cut the halves in half), or boneless pork chops-
1 cup Jasmine rice
2 1/4 cups chicken broth
Marinate chicken or chops in first 6 ingredients for at least 1 hour. Heat large skillet on med/high, add chicken and marinade. Brown chicken on both sides, at least 5 min. per side. Remove chicken to dish. You will have some of the cooked marinade left in the pan and you want that. Add rice and broth to pan and bring to a boil. Add chicken on top of rice, reduce to simmer and cover. Cook for 25 min. or until the water is absorbed and chicken and rice are done.
You could try adding 1 cup of frozen peas and 1/4 cup of water if you want this to be a one dish meal but I don’t like how the peas turn out.
I add in a pinch or two of dried cilantro as well or you could use a few sprigs of fresh cilantro.
